- En una olla profunda vamos a rehogar la cebolla, la zanahoria, la hoja de laurel y el ajo con el aceite de oliva hasta transparentar, a fuego bajo
- A continuación le agregamos el zapallo, la papa y el tomate, todo cortado en cubos, el cubo de caldo y agua hasta cubrir, sal y, si se desea, pimienta.
- Cocinamos a fuego bajo hasta que el zapallo y la papa se deshagan.
- Sacamos la hoja de laurel y licuamos (o mixeamos) hasta convertirla en una crema.
- Es una sopa que se puede freezar en porciones y tener siempre a mano!!!!
