- Nada mejor que abrir una cervecita para empezar esta receta...y comenzamos lavando bien los puerros, picamos los ajos y cortamos las cebollas en brunoise. Antes de meterlas en la sartén (grande) cubeteamos la calabaza en daditos después de pelarla. La podemos asar al horno o más rápidamente en una sartén con un chorrito de aceite y tapada. Al mismo tiempo en un cazo con agua caliente deshacemos el caldito de verdura.
- Una vez teniendo todo en marcha cocinamos la cebolla, el puerro y el ajos hasta que doren y le añadimos el pollo y salpimentamos. Removemos bien y una vez marcado el pollo le añadimos el arroz y volvemos a remover hasta que el arroz se transparente y es cuando le echamos la cerveza. Esperamos que reduzca una mijina sin dejar de remover y bajamos el fuego. Cada tanto removemos para que no se pegue el arroz y le vamos añadiendo caldo cubriendo el arroz. - Pasados unos 20 minutos probamos el arroz. Es importante que no se pase. Transcurrido este tiempo y ya con el arroz en su punto, apagamos el fuego y añadimos la mantequilla y removemos y acto seguido el queso rallado y removemos hasta que se deshagan. La calabaza se la puedes añadir a la sartén y mezclas o bien una vez servido el risotto se la pones encima a gusto. Queda mejor en la sartén. Haz de más porque seguro que repites.
